Free of chemical additions, true Italian pasta is extruded through a bronze cast, giving it a wonderful yellow appearance, a rough texture to hold sauces better, enhanced flavor and increased nutritional value. Pasta made in the U.S. is enriched, which means a chemical paste containing extra proteins and vitamins is added to the flour and water. Italian pasta contains no such mixture, allowing the richness of the natural ingredients to surface for a distinct, full flavor. Dried at slower and lower temperatures, our pasta swells up to three times its original volume while cooking.
