Acetaia Ducale Estense is owned and operated by Count Andrea Czarnocki Lucheschi. His estate, in the Veneto area, cultivates and processes aged Italian wine vinegars using grapes grown for the sole purpose of producing wine vinegar. The product is refined with proprietary ancient stocks of acetobacteria that are added to the hardwood barrels containing the aging grape must.

Using a natural processing method that requires no heat, this process is a precursor to balsamic vinegar of Modena.
