*Cannellini Summer Salad

A great dish on its own or next to grilled fish.

Ingredients


-12 oz dried Cannellini beans
-1 red onion
-1 can of tuna in olive oil
-extra virgin olive oil
-salt, pepper

Preparation


Soak the cannellini for at least 12 hours in a clay pot. Do not drain. Cook in their water until done. Drain. Slice the onion and mix with the cannellini. Add the tuna, oil, salt, and pepper. Serve cold. Serves four.
