This special chocolate is processed at a low temperature, as was the method of the Aztecs, so that the cocoa butter melts, leaving the sugar crystals intact. This results in a natural white film found on the surface that is consistent with this ancient method. The pistachio in this bar also comes from Sicily where high quality pistachio is cultivated.
Nutritious and rich in flavonoids, this chocolate is best enjoyed with grappa or a dessert wine such as Moscato. You can also melt it in milk for a delicious drink or grate over cappuccino.
