*Preparing Sundried Tomatoes
These succulent, tender, sun-dried tomatoes from Calabria in southern Italy are vine-ripened and dried the traditional way - in the sun with no additives or sulphur.
They are preserved only with salt so therefore, require a little preparation.
Sun Dried Tomatoes
Extra Virgin Olive Oil (if required for your needs)
Soak sun dried tomatoes in warm water for 5 minutes.
Drain and rinse with cold water.
Pat dry with a clean, lint-free towel or paper towel.
This is the basic preparation if you intend on using them for soups, sauces, cooked dishes or the like.
If you want to make antipasti, put them on sandwiches or bruschetta, then coat them with a premium extra virgin olive oil and they are ready to go.
If you want to make a paste from them to add to sauces or as sandwich spreads, put them in a blender or food processor with a little premium extra virgin olive oil and puree together.
Very simple. Very delicious.
