*Cannellini Patties

"Suppli' ai Cannellini"

- 12 oz dried Cannellini beans
- 1 egg
- 3 oz cooked ham
- 3 oz grated Swiss cheese
- 1 oz grated parmesan cheese
- 3 tablespoons of bread crumbs
- 2 oz wheat flour
- 1 clove garlic
- 1 twig rosemary
- 3 leaves sage
- 1 bunch parsley
- extra virgin olive oil
- salt, pepper

Soak the cannellini for at least 12 hours in a clay pot. Do not drain. Cook in their water with the unpeeled clove of garlic, the rosemary, and the sage until done. Drain and blend. Add to the Cannellini puree the diced cooked ham, the cheese, the breadcrumbs, the parsley, the salt and pepper and mix in. Roll the mix into 2 inch balls, cover with the flour, and fry in hot oil. Salt and serve hot. Serves four.
