*Paccheri with Tuna & Capers
This dish is a tradition in Southern Italy and the Islands.
- 1.1 LBS of Paccheri Pasta
- 20 cherry tomatoes
- 12 OZ. of chunk tuna
- 1/3 cup of capers (if packed in salt, rinse and soak them for at least 2 hours)
- 10-15 fresh basil leaves
- 5 Crushed red peppers (optional)
In a large bowl combine the tuna (not drained), capers, chopped tomatoes, basil chopped by hand and fresh, crushed peppers. Stir and let stand while you are cooking the pasta. Cook the Paccheri pasta for 15 minutes in boiling, salted water. When your pasta is done, mix all ingredients together and enjoy!
