*Crosta di Sale (Salt Crust)
For the hunter or the fisherman...
- 2-3 tbls Grigliata or Arrabbiata salt spice mix
- 2.2 lbs coarse sea salt
- whole fish or meat.
This is an unusual method of cooking either meat or fish. Prepare a salt mixture using one handful of the aromatic salt mix and around 1 kg (2.2 lbs) of plain coarse sea salt. Put a 1/2 inch layer of the mixed salt in a pan, then place either a fish or cut of meat suitable for baking on the salt. Completely cover with more of the salt mix. Moisten the salt with water. Bake in hot oven for around one hour. Break the salt crust before serving.
