Angela of Riso Carena tells us that you can always tell which beans or legumes are the best by how long it takes for them to cook. Well, her chick peas are like no other chick peas you've ever had. They must soak in cold water for 24 hours, then take approximately 2 and 1/2 hours to cook in boiling water. The effort is well worth it. Serve them hot or cold.
