Shells Marchigiana Style
recipe: Shells Marchigiana Style
Ingredients
1 lb. shells (pasta)
1 lb. sardines
1/2 cup white wine
1/4 cup extra virgin olive oil
1 bunch of basil
1 bunch parsley
1 clove garlic
salt, pepper
Preparation
Clean the sardines and cut into slices. Put the oil in a pan and saute the garlic. Add the sardines and crush them into the oil with a wooden spoon. Add the white wine and allow to evaporate. Add the finely chopped parsley and basil, salt, and pepper. Bring a large pot of salt water to a boil and cook the shells. Strain. Dilute the sauce with some of the boiling salt water if necessary. Add to the strained pasta. Serves four.
