Cannellini Summer Salad
Ingredients
12 oz dried Cannellini beans1 red onion
1 can of tuna in olive oil
extra virgin olive oil
salt, pepper
Preparation
Soak the cannellini for at least 12 hours in a clay pot. Do not drain. Cook in their water until done. Drain. Slice the onion and mix with the cannellini. Add the tuna, oil, salt, and pepper. Serve cold. Serves four.
