For 1 package containing 500 grams (1.1 lbs) of pasta, bring to a boil 1 and 1/2 gallons of water. Add one tablespoon of coarse sea salt. Add the pasta to the water and stir immediately. When boiling resumes continue cooking pasta while stirring every 1-2 minutes. Different pasta shapes have different cooking times. For best results, keep tasting the pasta until it is done. Before draining the pasta set aside 1/2 cup of the cooking water to use in case the sauce and pasta is too dry. Place the pasta in a bowl and add the sauce. Buon Appetito! 1 lb. "guitar" spaghetti (square cross section)
1 lb. lamb cut into pieces
1 1/2 lbs. peeled tomatoes (roma, preferably)
1 clove garlic
1 small onion
1 bay leaf
thyme, marjoram
celery
1 small carrot
1/2 cup white wine
1/4 cup extra virgin olive oil
salt, pepper

details:
Chop the onion and the garlic and saute in the extra virgin olive oil. Add the celery and carrot. Add the pieces of lamb and stir occasionally so that the carrot and lamb brown a little. Add the white wine and let it evaporate. Add the tomatoes and the remaining spices and cook at a low to medium flame for approximately 1 hour. Add salt and pepper. Cook the spaghetti in abundant salt water, drain, and place in a large bowl. Add the sauce and serve. Serves four

2 pounds young asparagus
1 red bell pepper
1/2 cup red onions, thinly sliced
3 Tbsp minced garlic
1/4 cup extra virgin olive oil
1 lemon
1/2 cup vegetable or chicken broth
Salt and pepper

Using a microplane grater, grate the rind of the lemon into a cup. Juice the lemon, add to the cup. Add 1 tsp salt and 1 tsp pepper to the cup, set aside.

Rinse asparagus. Snap off the ends (they will break where they start to get tough). Cut the stalks into 2-3" portions.

Heat a large cast iron pan over high heat, add olive oil. When oil is hot, add asparagus, onion and red pepper, and gently toss or turn with a spatula. Cook this way for three minutes, tossing occasionally, until asparagus starts to braise.

Add garlic, and lemon mixture, gently toss 30 seconds, and add broth. Cover, cook over medium high heat until asparagus is al dente. Remove cover and reduce sauce a bit, being careful not to overcook the asparagus.

10.6 oz whole Farro
1 oz butter (or buttery Ligurian e.v. olive oil)
2 whole artichokes
meat or vegetable broth
parmesan, salt

Remove the outer leaves of the whole artichokes and cut into thin slices. If using our imported whole artichokes, rinse the vinegar away with water, then cut into thin slices. Place the butter in a clay pot and add the artichokes. Saute. Add the farro and stir. Add the simmering broth and stir. Adjust for salt. Keep ladleing the broth into the farro as it cooks. When done, remove from the stove, add parmesan and serve hot.

7 oz of dehydrated Borlotti beans
1 clove of garlic
1/2 stalk of celery
1 onion
1 rosemary twig
4 sage leaves

2 and 1/2 oz diced pancetta
7 oz of whole farro
salt, pepper

details:
Soak the Borlotti beans in cold water for 12 hours, preferably using a clay pot. Add to the beans the crushed garlic and celery cut into 2-3 large pieces. Bring to a boil using the clay pot directly over the flame and allow to cook for 1 to 1 1/2 hours. Chop the onion together with the rosemary twig, the sage, and saute in the oil using a separate pan. Add the pancetta and allow to brown before adding the farro. Add this saute to the cooking Borlotti beans and add boiling water if necessary. Cook for another 40 minutes. Adjust for salt and pepper and serve after drizzling good olive oil and adding parmesan cheese. Serves four.

A sauce for our most popular pasta shape

ingredients:
1 1/2 Lobster (live) or any shellfish
8 shallots peeled & minced (4 for stock leave whole)
8 cloves of garlic (4 for stock)
1 carrot peeled and roughly chopped
8 oz chopped prosciutto
2 tablespoons of olive oil
1 package of frozen peas
1 tablespoon of tomato paste
1 cup of half and half
1 cup of heavy cream
2-3 pinches of saffron (bloomed in 1 tablespoon of hot water)
salt and pepper to taste

details:
Stock preparation:
Saute all veggies and prosciutto in a large saucepan with olive oil until translucent. Remove and set aside leaving the oil behind. Throw in the lobster and add 2 cups of white wine. Remove the lobster after 2 minutes. Lobster meat will be slightly raw. Immerse in cold water and remove the meat from the shell. Add the shells and veggies back into the sauce pan. Simmer for 30 minutes to 1 hour until reduced by half.

Sauce preparation:
Heat the olive oil and add the prosciutto. Cook gently for 2 minutes. Add the shallots & garlic left over after the stock preparation, the tomato paste, and cook 1 minute more. Bring 1 and 1/2 gallons of water with 1 large tablespoon of coarse sea salt in a large pot to a rolling boil. Add the pasta and cook 9-11 minutes. Add the tomato sauce, the celery, the bouillon, and simmer for 15 minutes. Add this sauce to the beans and continue cooking. About 10 minutes before the beans are done, add 1 cup of pasta. Adjust for water so that the soup is thick but not too dry. Before serving sprinkle some good extra virgin olive oil and parmesan. Serves four.

1 package of Marella lanterne (1 lb.)

Boil 2 cups of water and rehydrate the Porcini in a bowl. Let stand for 15 minutes. Heat the olive oil and gently saute the sausage for about 3 minutes. Add the fresh mushrooms first, then the Porcini, followed by the garlic and the bomba calabrese. Add wine and simmer for about 1 minute. Add the tomatoes and cook for about 1 hour stirring every so often over a low flame. Cook the pasta separately in abundant salted boiling water for about 8-9 minutes. Save some of the cooking water. Add the sauce to a pan and toss the pasta in the sauce. Mix vigorously. Add some of the water from the cooking pasta if the sauce is too dry. Clean the rapini and remove some of the leaves and rough stems. Bring a large pot of salted water to boil. (It is best to use coarse sea salt). Throw the orecchiette into the pot. After five minutes add the rapini vegetable to the pot of boiling pasta. (Save some water to add later if the pasta is dry.) Meanwhile, in a separate pan saute the garlic in the olive oil with the hot peppers and anchovies (or caper and anchovy stuffed hot peppers). Remove the garlic before it browns and take sauce off flame. When the orecchiette are done, drain the pasta and saute briefly together with the sauce in the pan. Serve immediately. Serves six.

Add a generous amount of black pepper, then throw in the canned tomatoes and bring to boil before reducing heat and covering until the sauce reduces to a thick consistency. Boil the orichetti in salted water and save 1/2 cup water before draining. Pour the sauce over the pasta and mix in the chopped parsley, sprinkle individual dishes with grated parmesian at the table. In a separate clay pot, cook the polenta in 1 1/2 quarts of water, stirring continually until done. Pour the polenta onto a large wooden board and spread it out immediately so that you obtain a 1/2 inch thick layer of medium consistency polenta. In the middle, add the meat and tomato sauce and spread it out. The final outcome should look like a large pizza that serves six people. Traditionally, people sit around this large board and each eats a wedge they cut out for themselves. Alternatively, you may pour the polenta spread and sauce onto 6 plate size cutting boards. Sprinkle with abundant pecorino cheese when ready to serve. Serves six.

11 oz tomato sauce
1-2 tsp vegetable bouillon
salt, pepper
grated parmesan

details:
Soak the dehydrated cannellini beans in cold water in a clay pot. Dice the onion, carrot and celery and add to the beans. Put the clay pot directly over fire and bring to a boil after adding 1-2 tsps vegetable bouillon. Cook for 20 minutes from when the water begins to boil. Chop the garlic, the rest of the onion, and the rosemary and saute using the olive oil in a separate clay pot. Add the Arborio rice and saute for 1-2 minutes. Add the red wine, then add the beans to the saute leaving the bean broth boiling in the first pot, and add the tomato sauce. Continue cooking while stirring and ladleing the boiling broth from the beans as the rice cooks. When done drizzle some raw extra virgin olive oil and the parmesan. Allow to sit for 1-2 minutes before serving. Serves four.

21-30 shrimp

4 shallots, minced

1 cup pancetta, cubed or chopped
1 orange peel
1 teaspoon of hot pepper flakes or Bomba Calabrese
1/2 cup white wine (Pinot Grigio)
3-4 jars of Tomato Sauce by Iacobini
salt and pepper to taste
1/2 cup of cream

details:
For shrimp: This should be done last so shrimp are moist. Wash and peel, devein and toss with salt and pepper. Sear in hot olive oil (Perla) over high heat. Finish with 1 tblsp zest of orange. Reserve and place over pasta.

Method
Heat the oil in a heavy bottom pot. Sweat the shallots, pancetta, garlic, hot pepper, and pancetta over medium heat until soft. Deglaze with wine for 1-2 minutes and add the tomatoes while stirring. Cook over low heat stirring frequently for 1 hour or until thick. Season with salt and pepper. Cook pasta in sea salted water while boiling rapidly for 8-10 minutes. Pasta should be al dente. Add cream to sauce and mix well. Sauce should have an orange-pink hue. Add the drained pasta to a saucepan with the sauce and finish cooking the pasta in the sauce for about 1 minute over medium low heat. Place the prawns (shrimp) on top and garnish with leafy Italian parsley. Serves four.

ingredients:
1 lb. of shells (pasta)
1/2 cup ricotta cheese
1/2 pound spinach
1/4 cup butter
1/3 cup cooking cream
2 tablespoons extra virgin olive oil
salt

details:
Preheat oven to 450 degrees

Steam the spinach and chop finely. Add the butter and ricotta to the spinach and blend with a fork until creamy. Put in a casserole. Add the oil, cooking cream, and stir over a low flame. In a separate pot boil the shells with abundant salt water. Drain. Place in the casserole and mix with the creamy spinach sauce. Put in the oven 5 minutes and serve. Serves four.

ingredients:
2 cups Italian rice
1/3 cup butter
Prawns, shrimp, or lobster
1 onion
Fresh parsley
Grated parmesan cheese
White wine

details:
Cook the seafood in water with a little white wine, and a few pinches of finely chopped onion and parsley. Remove the seafood shell and outer layer, and cut into small cubes. In a shallow pan saute' the onion cut into thin slices in butter. Add the rice and stir until all the butter is absorbed, then add hot water. Stir occasionally. When all the water is absorbed by the rice add more until the rice is cooked. Add one cup of the seafood sauce, then add the seafood just before serving. Add butter and grated parmesan cheese to taste. Stir for several minutes away from heat before serving. Serves four.

recipe: Risotto with Salmon http://www.italianharvest.com/recipes.php/tmpl/5

ingredients:
2 cups Italian rice
1 pound fresh salmon
1/4 cup butter
1 onion
1 glass dry white wine
1 glass sparkling wine
salt, pepper
2 egg yolks
1/2 cup brandy

details:
Preheat oven to 400 degrees F

Boil the salmon in a pint of water, drain, and save the water. Place the finely chopped onion in a pot with the butter, add the rice and saute' at a high flame. Wet the rice a little at a time with the salmon water. Add the white wine, then the sparkling wine. Stir vigorously for 1-2 minutes. Add salt, pepper, and the salmon cut into pieces. Turn down flame and simmer while continuing to add the hot salmon water to keep the rice submerged and at a boil. Stir gently. When the rice is cooked turn off flame, add parmesan cheese, the egg yolks, brandy and stir vigorously. Transfer the rice to an oven pan and bake at 400 degrees F for 15 minutes. Serves four.

recipe: Risotto with Mushrooms http://www.italianharvest.com/recipes.php/tmpl/10

ingredients:
1 lb Arborio rice
1/2 white onion
1/2 cup butter
1/4 cup parmesan cheese (may use more, to taste)
1 handful dried mushrooms or
1/2 lb fresh mushrooms, preferably wild
2 qts light vegetable broth
chopped parsley
salt

details:
Saute' the onion in 1/4 cup of butter, add the rice and saute' at high flame. Add ladels of boiling broth keeping the rice barely covered and simmer until almost cooked. Put the dried mushrooms in warm water and let sit 20 minutes. Strain the mushrooms, add to the rice when first adding the broth. If using fresh mushrooms, clean and add to the rice when first adding the broth. Salt to taste. When the rice is almost cooked add the remaining butter and grated parmesan cheese. Mix. Add the chopped parsley. Take away from flame and let sit 1-2 minutes. Serve. The rice should be soft and creamy. Serves four.

recipe: Risotto with Bell Peppers http://www.italianharvest.com/recipes.php/tmpl/7

ingredients:
6 oz canned tuna in oil
2 cups Italian rice
black olives
1 red bell pepper
5 fresh tomatoes
1 glass of dry white wine
1 onion
3 tablespoons butter
3 tablespoons of extra virgin olive oil
1 pt broth (chicken or vegetable)
1/2 teaspoon safron

details:
Place the red bell pepper on a range burner at medium flame. Turn the pepper every 1-2 minutes until it is all charbroiled. Peel off burnt skin, open, clean inside and toss the seeds, and cut into strips. Place the tomatoes in a pan of boiling water for 1 minute. Drain. Peel off the skin and cut the tomatoes into slices. Chop the onion finely, and saute' it with the oil and butter. Add the sliced peppers, the split olives without pits, the tomatoes, the white wine, salt, and cook at a medium flame for 5 minutes. Boil the rice for 13-14 minutes, drain it, and place it in the pint of warm broth in which the safron has already been dissolved. Finish cooking the rice in the sauce until it has absorbed all the liquid, or is fully cooked. Add the tuna, mix, and serve. Serves four.

2 cups Italian rice
2 medium sized boiling potatoes
1/4 pound Brusselsprouts
2 carrots
1 cup Porcini mushrooms
1/3 pound shallots
1/3 pound green peas
2 egg yolks
1/4 cup butter
1/3 cup flour
1 cube vegetable bouillon
salt, pepper

details:
Chop the Porcini mushrooms and saute' for about 20 minutes with butter, salt, pepper, and water. In a separate pot cook in water (or steam) for about 30 minutes the brusselsprouts, carrots, shallots, potatoes, and peas. When the vegetables are cooked dice the carrots and the potatoes. Boil the rice for about 18 minutes, drain it, add to the vegetables, mix, and place everything on to a serving dish. Keep warm. In a separate pan place the flour and blend it slowly into the pint of warm broth, add 2 egg yolks, butter, mushrooms, salt, and pepper. Stir. Add to the rice and serve. Serves four.

ingredients:
1 1/2 pounds asparagus
2 cups rice
1/2 cup butter
1 onion
1 cube vegetable bouillon
1/2 cube meat bouillon
1/2 glass of dry white wine
Grated parmesan cheese
salt, pepper

details:
Cut off the asparagus tips and set aside. Remove the tough end of the stems. Boil in a small amount of salted water until tender, drain and save water. Mix the asparagus in an electric blender to creamy consistency, and pour back into saved water. Keep warm. Melt 1/4 cup butter in a separate wide pan, add the finely chopped onion and saute' over medium heat for a few minutes. Add the risotto and stir into the saute'd onion, turn up the flame, add the wine, and cook until wine evaporates, then reduce flame. In a separate pot bring the asparagus broth to a boil and add a little at a time to the cooking rice, so as to keep the rice barely submerged. Add the 1/2 cube meat bouillon, salt, and pepper to taste. Five minutes before the rice is done add the asparagus tips. When cooked, add butter and grated parmesan cheese. Serves four.

1 lb. penne pasta
1 6 oz. can of tuna in oil
1/2 cup green peas
1 16 oz can of whole, peeled tomatoes
2 1/2 tablespoons extra virgin olive oil
1-2 cloves garlic
1 large red bell pepper
3-4 leaves of basil
salt, pepper

details:
Dice the pepper and saute' in the olive oil with the chopped garlic. (Do not allow garlic to brown). Add the tuna and saute' for 2 minutes, add the tomatoes and chopped basil, salt, and pepper. Chop up the tomatoes while cooking in sauce. Cook the penne in abundant water and a little sea salt. Drain. Add the tomato and tuna sauce to the pasta. Serve with grated parmesan cheese. Serves four.

9 oz whole Farro
1 small red onion
red wine vinegar
2 oz. Swiss cheese
4 oz. Pitted black olives
3 oz. Red radish
1 small white fennel
1 can of tuna in olive oil
basil, parsley
salt, pepper
1/2 cup of extra virgin olive oil

details:
Cook the Farro in 2 qts. of salted water for 1 hour. Drain and cool. Slice one small red onion and marinate in 1/2 cup balsamic vinegar for two hours, then drain. Dice the Swiss cheese, the black olives, the radishes, and the fennel. Add the tuna, basil, parsley, salt, pepper. Mix. Add abundant very good extra virgin olive oil, and serve cold. Serves four.

ingredients:
3 medium eggplants
extra virgin olive oil
3/4 lbs fresh mozarella cheese
Parmesan cheese
2-3 tablespoons bread crumbs
few basil sprigs, to garnish

Sauce;
2 tablespoons olive oil
1 medium sized onion, finely chopped
2 garlic cloves, crushed
14 oz. can chopped tomatoes
6-8 basil leaves
ground sirloin, if desired

details:
Cut the eggplants thinly without peeling them and fry in a little olive oil. Drain and layer the fried eggplant slices over some absorbent paper to soak up the extra oil.

Prepare the sauce by heating extra virgin olive oil in a sauce pan and sauteing the onion and garlic for 5 minutes. You may add some ground sirloin if you wish. Add the canned tomatoes, salt and pepper to taste. Bring to a boil, then lower the heat and simmer for about 10 minutes, or until the sauce reduces to a thicker consistency. Tear the basil leaves into small pieces and throw into the sauce when nearly done.
Preheat the oven to 400 degrees F.
Lay the eggplants in a greased baking pan, ladle a layer of sauce over the eggplant and sprinkle mozzarella pieces over the sauce. Add another layer of eggplant, sauce, and mozzarella, and continue layering until you reach the top of the pan. Finish with the sauce and parmesan on top. Bake for 20-25 minutes, until golden brown and the sauce bubbles. Let stand for 5 minutes before serving. Garnish with basil sprigs. Serves 4-6.

1 pound spinach
1 egg yolk
1/2 cup grated parmesan cheese
1 cup beshamel sauce
3 tablespoons butter

Preheat oven to 450 degrees.

Steam the spinach and drain. Put the spinach, ricotta, egg yolk, half of the parmesan cheese, nutmeg, salt, and pepper into a bowl and mix well. Place some of the mix onto the center of a crepe and spread. Fold the crepe over itself twice. Repeat for each crepe. Butter an oven pan, coat each crepe with beshamel and place the crepes into the pan. Sprinkle the remaining parmesan cheese over the top. Add some bits of butter, and place in the oven until done.

ingredients:
1 lb. bucatini pasta
2-3 oz. prosciutto ham (unsliced)
3 tbsp butter
1/4 cup bechamel sauce
1/4 cup grated parmesan cheese
1 cauliflower
2 fresh tomatoes (roma, preferably)
1 onion
1 cube meat bouillon
salt, pepper

details:
Dice the prosciutto and saute' in the butter with the sliced onion. Steam the cauliflower briefly in a separate pan. Cut off the cauliflower tips and add to the saute'd prosciutto with salt and pepper. Continue cooking at a low flame, add the tomatoes cut into cubes, and add the bouillon broth. Bring a pot of salt water to a boil and add the bucatini. Drain when done. Place on a serving dish and add the cauliflower sauce. Add the bechamel sauce and sprinkle grated parmesan cheese before serving. Serves four.
