For centuries the fishermen of the small Neapolitan village of Cetara have been fishing anchovies using the traditional "Lampara" light for attracting this tasty Mediterranean fish. After salting the anchovies and curing, the liquid drained off is collected and used in high cuisine. Put a dash of this amazing condiment on any seafood preparation, pasta, vegetables, or farro.
