Scuccuzzu

This small "pill" pasta has an interesting story. It is probably an attempt by Ligurians to imitate cuscus from Arab countries. Ligurians that moved to an island off the Tunisian coast in the 1500s, learned to make Scuccuzzu as an alternative to Arab cuscus, then moved to Carloforte in Sardegna in the 1700s and there introduced this pasta to Italy. In fact, go to the island of Carloforte in Sardegna and listen to the people speak in Ligurian dialect. Use this pasta in soups. Great flavor!

durum wheat and flour.
