Minestrone mix

The legumes in this mix generate a soup that is full of flavor.
Suggested use:
Soak one half the mix in one quart of cold water overnight, preferably in a clay pot. Place over the fire, bring to a boil, and simmer for about 30-45 minutes. In a separate pan, saut? some pancetta in olive oil together with a chopped onion, one stalk of celery, and a carrot. Add 1/2 cup of tomato sauce. Cook in the pan for about 15-20 minutes. Add all the ingredients of the pan to the clay pot with the minestrone cooking, cook for another 15 minutes while adjusting for water. Add salt, pepper, and very good raw extra virgin olive oil. Serve hot with a sprinkle of parmiggiano cheese.
Ingredients:
Beans, spelt (farro), split peas.
